Okemo Executive Sous Chef Jason Tostrup was the mastermind behind the introduction of Zen Den Sushi, in the Roundhouse, last winter. He developed a passion for sushi and sashimi as a result of his friendship with Nobu Matsuhisa and Iron Chef Masaharu Morimoto, when he worked as a chef in Aspen, Colo.
“Sushi is going to be a big hit at Okemo,” said Chef Jason. “We will be celebrating umami, while offering our guests another healthy, nutritious, clean way to have lunch when they are enjoying a day in the outdoors.”
Chef Jason has hired certified sushi chefs and sources fish from one of the best seafood companies in the country, Honolulu Fish Company. Okemo’s commitment to bring the best quality sushi and sashimi to its guests includes participating in the Monterey Bay Aquarium Seafood Watch program, to offer only seafood that is caught or farmed in ways that don't harm the environment. In addition to sushi and sashimi, the bar will serve miso soup and Japanese salads.
